Want an in on a secret about me? I love vegetable fritters. Especially the kind with a light batter coating on it. I know, the cholesterol is not good for me but fried vegetable fritters is so good. Besides, I can claim it to be somewhat healthy for me. After all, it is vegetables, right?
Fried Cauliflower Fritters
Ingredients
1/2 head of cauliflower, cut into small florets
1 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp onion powder
1 tsp paprika or curry powder (optional)
1/2 tsp black pepper
1/2 to 2/3 cup milk
Oil or shortening for pan frying
Directions
Step 1: Preheat oil in a cast iron skillet to 350F or 176C.
Step 2: Cut cauliflowers into florets. Wash and drain well.
Step 3: Mix the flour, baking powder, salt, pepper, paprika, onion powder in a bowl. Add in the milk gradually and whisked till it is lump free. Use less milk for a thicker batter, if you like. Dip the cauliflower florets into the batter.
Step 4: Fry cauliflower fritters in the hot oil till golden brown, about 2-3 minutes.
Step 5: Drain well on a plate lined with paper towels.
Serve fried cauliflower fritters with fried chicken and baked beans. It is a great appetizer on its own with ranch dressing.
