Summer Grilled Vegetables

I love grilling in the summer. All the vegetables that I can cook on the grill. Amazingly enough, I never truly get tired of them. There are just so many ways of grilling vegetables with different marinades, sauces and all. The sky is the limit as they say.
Summer Grilled Vegetables
Ingredients
1lb white button mushrooms, halves
1 green bell pepper, sliced into 1/4 inch strips
1 large onion, sliced into thick rings
1/4 cup soy sauce
1 Tbsp Worcestershire sauce, L&P
2 tsp sugar
1/2 tsp salt
1 tsp black pepper

Directions
Step 1: Marinade mushrooms, onions and bell peppers with soy sauce, Worcestershire sauce, sugar, salt and black pepper for at least 1 hour.

Step 2: Preheat grill to high. Place vegetables in a single layer on grill. Cook till vegetables has softened and well caramelized. If you have make some Chimichurri marinade, baste the vegetables with it while grilling.

Step 3: Serve grilled vegetables with grilled meat and Spanish rice. Personally, I only eat the grilled vegetables and Spanish rice with lots of chimichurri sauce.

  1. I agree with you Reese, with all the different types of sauces and marinades out there, the sky's definitely the limit. Hubby and I love trying out different marinades on our steaks, but need to try them on our veggies too. Thanks for sharing your lovely recipe. Will have to try this some time.
